  1. Preheat oven to 400 degrees
  2. Chop celery stalks.
  3. Mix all ingredients by hand.
  4. Spray muffin tin with olive oil spray
  5. Add mixture to muffin tin.
  6. Cook for approximately 25 minutes.
Recipe Notes
  • Makes one serving of protein to 1/2 cup of veggies.  Don’t forget to have and additional 1 1/2 cups of veggies on the side.
  • Skip your allowed 1 oz of milk in your morning coffee to account for the milk in this recipe.  Recipe calls for  1/4 cup which equals 2 oz for two servings, so the numbers match!
